Quinces are golden yellow and hard and might not be an interesting fruit when they are raw but bake them and they turn pink, delicious and tempting. Their floral scent is unforgettable, no wonder they were the forbidden fruit in the garden of Eden.

Quinces are in season in Australia and are in all supermarkets and farmer’s markets. I bought them a few days ago in the supermarket and right now my kitchen has a very subtle aroma that is just lovely.

Cook them, poach them, roast them, or simmer them and pair them with yogurt, vanilla ice cream, cheese, pork, lamb, duck. Whether you pair them with savoury dishes or desserts you will fall in love with them.

Ingredients

  • 4 quinces
  • Honey to drizzle
  • cinnamon to sprinkle
  • Toasted pistachios, or almonds
  • Vanilla ice-cream

Method

  • Preheat the oven to 180C
  • Wash the quinces to remove any dirt. Pat them with a piece of kitchen paper to dry.
  • Using a bamboo skewer prick the fruit all over.
  • Cover each of them with aluminum foil and put them on a roasting tray.
  • Bake for 45 minutes or until tender, but still holding their shape.
  • Remove the quinces from the baking tray and remove the foil.
  • Cut them in quarters.
  • On each serving plate arrange 2 quince quarters, spoon 4 tablespoons of ice-cream then drizzle with honey and sprinkle some cinnamon.
  • You can also add roasted almonds or pistachios to add some crunch.

Tips

  • You can also serve the baked quince with roast pork, they make a great combination.
