
A savoury summer salad using super-juicy fruits!
Summer is definitely my favourite time of the year in Australia. It is all about Christmas, swimming in the sea, outdoor cooking, juicy fruits, green crispy salads and last but not least it is the season to entertain family and friends in your home.
Watermelons are everywhere, the red shades and juicy looks inspired me to make this juicy sweet and salty salad.
Ingredients
- The first step is to find a great seedless watermelon, dense and richly coloured. Cut the watermelon into thick slices, rind removed. Use a round mould to cut the watermelon in round shapes. Set them aside.

- The second step is also to find a fresh, tasty marinated Goat’s Cheese, or a good marinated Greek Style cheese.
- 1 red onion, finely sliced (use a Mandolin)
- A handful of wild rocket or arugula
- 2 handfuls of butter leaf salad
- 1 small cucumber finely sliced diagonally (use a Mandolin)
Salad Dressing Ingredients
- 4 tablespoons of olive oil
- The juice of one lemon
- 2 tablespoons of honey
- Salt and pepper to taste
- Mix all the ingredients together with a spoon and set aside.
Method
- Place the watermelon rounds on the serving plates.
- In a medium sized bowl mix all the salad leaves together with the sliced onions and cucumbers. Drizzle some of the vinaigrette and with a fork carefully toss all the ingredients.

- Place the salad on top of each of the watermelon rounds.

- Crumble the Goats cheese over the top. Drizzle with more olive oil and few grinds of black pepper.

- Serve immediately.
Tips
- This dish greatly depends on the sweetness of the watermelon and quality of the cheese.

- Sprinkle the cheese over the dressed salad, rather than mixing in. This adds contrast to each bite.
