As long as I can remember, soccer has been part of the DNA of every Colombian. It is woven into our identity-we simply love the game. Tournament season is a special time when family and friends come together to share the excitement, cheer for their teams, and create lasting memories.

This year, I’ll be ready for kickoff wearing my Colombia soccer jersey, my cap, and proudly waving my flag. And I won’t be alone! my little cat, Shakira, will be joining the celebrations, sporting a Colombia bandana around her neck.

When it comes to international tournaments, my heart is often in two places. I never quite know whether to cheer for Colombia or Australia. I can only hope they don’t end up playing each other for a place in the next round, because then I truly wouldn’t know where my loyalties should lie! In the end, though, it doesn’t matter who wins-both countries feel like home to me.

As I was thinking about what to serve family and friends while we gathered around the television to watch the matches, I suddenly had a lightbulb moment: hot dogs!

Hot dogs bring the same sense of excitement and anticipation as the World Cup itself. Few foods create such an instant reaction. From the irresistible aroma filling the kitchen while they cook to the endless possibilities of topping, hot dogs are guaranteed crowd-pleasers.

While hot dog recipes vary around the world, the classic version is wonderfully simple: a soft bread roll cradling a juicy sausage, whether grilled, steamed, or boiled. Add a generous drizzle of sauce and a pile of sweet caramelised onions, and something magical happens. What starts as a humble snack quickly becomes a delicious treat.

For the game day, I chose a simple recipe that lets the hot dog shine as the star of the show. The caramelised onions and sauce add just the right touch without overpowering it. I can almost guarantee your guests will be asking for seconds while cheering on their favourite team.

Ingredients

  • 8 high quality pork hot dogs
  • 8 artisan hot dog buns

Ingredients for the Caramelised Onions

  • 2 large onions, thinly sliced
  • 2 tablespoons of butter
  • 2 tablespoons brown sugar
  • Salt and pepper to taste

Ingredients for the Sauce

  • 1/2 cup Mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet pickled relish
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method

  • Melt the butter in a medium size pan over medium heat.
  • Add the onions, brown sugar, salt and pepper. Cook, stirring occasionally, until the onions are soft and caramelised. Set aside.
  • In a bowl, mix together the mayonnaise, sour cream, ketchup, mustard, pickled relish, smoked paprika, salt and pepper until well combined. Adjust seasoning to taste.
  • Preheat your grill or your pan on a medium heat. Grill the hot dogs, turning occasionally, until they are cooked and have grill marks.
  • Spread a little butter on the buns and grill them as well, until lightly golden.
  • To serve spread a generous amount of the sauce on each bun. Place a grilled hot dog on each bun, then top with caramelised onions.
  • Serve your hot dogs with sweet potatoe fries.

Tips

  • You can add crumbled blue cheese on top.
