Beat the chill with this easy curry recipe that will bring back your smile despite the cold. Our bodies and moods are heavily impacted by the amount of sunlight we are exposed to. What we eat also plays a surprisingly important role in how we feel.

This curry creates a rich sauce full of flavours filling the house with a delicious aroma. This slow cooked curry won’t disappoint you, all the goodness of the ingredients cook slowly creating a delicious and tender meat that literally melts in your mouth. It is made for busy days and anyone who wants dinner to cook itself.

Ingredients

  • 1 kg beef chuck, cut into 5 cm cubes
  • 2 tablespoons vegetable oil
  • 4 tablespoons red Thai curry paste
  • 2 lemon grass stalks, bruise or crush the stalks to release the natural oils
  • 2 coriander roots, clean them well
  • 6 kaffir lime leaves
  • 1 centimetre piece of ginger, finely sliced
  • 6 garlic cloves
  • 1 red chilli, sliced – you can add more chilli if you want your curry hotter
  • 1/2 cup ground peanuts
  • 1/3 cup brown sugar
  • 1 400 ml can of coconut milk
  • 1/2 cup of water
  • 2 tablespoons of fish sauce

Method

  • Set your slow cooker to brown. Add the oil.
  • Once the oil is hot place the beef cubes in batches and seal and brown the meat.
  • Stir in the Thai curry paste, the ginger, lemon grass, coriander roots, kaffir leaves, garlic cloves, red chilli and ground peanuts. Mix all the ingredients well with a spoon.
  • Pour the coconut milk, water and brown sugar into the pan. Stir all the ingredients well .
  • Set your slow cooker at 120C for 2 hours. Pop the lid on the pan and let it simmer away.
  • Let the meat simmer away and after 1 hour check if the meat is tender.
  • Once the meat is tender and soaks all the juices test the curry for seasoning. If you need more salt add fish sauce or a bit of salt.
  • Scoop the curry into bowls and garnish with chopped coriander leaves and slices of red chilli. Serve with hot Jasmin rice.

Tips

  • This curry is almost like a Rendang, the flavour is very similar. It is a combination of all the Asian flavours I love. It creates a sauce that will have you licking the plate.
